    Peanut Butter Cookies with Lemon Oil

    This may sound like an interesting combination but…. these are a weekly staple in our house and are delicious. Not being much of a baker, the fact that these only have 4 ingredients makes them very appealing. For those avoiding sugar, these yummy treats are made with rice malt syrup…..they are also very low in carbs. Win, win.

     Ingredients:

    250g Crunchy Peanut Butter

    ¼ Cup of Rice malt syrup

    1 egg

    4 drops of Pure Lemon Essential Oil

    Method:

    1. Add the peanut butter, egg and syrup into a mixing bowl and mix together until the ingredients combine to create a dough. Add the 4 drops of lemon oil and mix through the dough.
    2. Line a biscuit tray with baking paper then scoop teaspoon sized scoops of the dough onto the tray evenly spaced and push down with a fork so they are all the same thickness.
    3. Bake in the oven at approx. 180 degrees for approx. 10 min. Please note that due to the fat content in these cookies, they bake and burn very quickly so watch them like a hawk. I stay in the kitchen while they are cooking to avoid burning them.
